Healthy, Easy and Kid-Approved: No-Fry Buffalo Chicken Wraps

By Holly Christy, Publisher of Macaroni Kid Mt. Airy-Damascus-Urbana July 8, 2018

During these hectic summer months, we’re all looking for quick and easy healthy meals that still taste delicious.

I found all of those key ingredients in these easy, no-fry buffalo chicken wraps.

These came together super fast for dinner, and they were a real crowd-pleaser!

As made here, the chicken isn't super spicy (my kids thought it was just right), but you can add more hot sauce to suit your taste (my husband and I added a few more splashes to our wraps!) The veggies and dressing cooled it down significantly creating a tangy, crunchy, satisfying, healthy — and easy! — meal.

Here’s how to make it.

Ingredients:

  • 2 pounds boneless, skinless chicken tenders
  • 3 tablespoons hot sauce (I like Crystal or Sweet Baby Ray's)
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 6 low-carb wraps
  • Shredded carrot/cabbage/broccoli mix (in the bagged salad section of your grocery store)
  • Lettuce or spinach
  • Ranch or blue cheese dressing

Directions:

  • Marinate the chicken in the hot sauce, oil, and spices for at least 30 minutes.
  • Grill the chicken or cook in a skillet coated with nonstick spray over medium-high heat, approximately 5 minutes per side.
  • Lay out the wraps and allow everyone to add the dressing, vegetables, and extra hot sauce to suit their tastes.
  • Add chicken, fold up the bottom, roll securely and eat! Yum!

A healthy meal the whole family loved -- and it hardly took any time at all in the kitchen! That makes these no-fry buffalo chicken wraps a winner in my house! Hope you enjoy them too.
